21/4 tsp yeast
3 Tab instant potato flakes
1/2 cup sugar
1 cup warm water
BREAD
1 cup starter
6 cups bread flour or plain flour
1 Tab salt
1/2 cup sugar
1/2 cup oil
1&1/2 cups warm water

Feeder for after making bread
3 Tab potato flakes
1/2 cup sugar
1 cup warm water

Directions:
Directions:
Use wooden spoon only Mix yeast, sugar, potato flakes and water. Stir and cover loosely (quart jar with holes punched in lid works great) let it sit at room temp for 2 days. Stir once a day
Feed with the feeder potato flakes, sugar and water .stir and put in fridge 3-5 days
Now ready to make bread
Bread
Combine all ingredients for bread. Mix and knead for 10 minutes or until dough is smooth and elastic. You can use kneading beater or by hand
Oil a large bowl and place dough in it. Turn over until oil on all sides of dough Place a damp cloth on top and let it sit out at room temp (away from drafts) overnight or at least 12 hours (I put mine in oven)
Then punch dough down with your fist. Knead on floured surface for about 5 minutes to get air bubbles out
Spray oil in 3 loaf pans or 2 if you want larger loafs. Divide dough and shape to put in loaf pans. Cover pans with a cloth and let it rise 6 to 8 hours. I put in microwave or oven so draft free
Preheat oven 350 and bake 30 to 35 minutes. If you like you can put some butter on top last 5-10 minutes of baking. Cool on wire rack
Enjoy
If you want to keep starter going add the feeder sugar, potato flakes and warm water
Stir sit on counter overnight then put in fridge 3-5 days
Then start with bread again
