1 1/2 pounds russet potatoes
1 pound yellow potatoes
3 tablespoons butter
2 tablespoons olive oil
1 tablespoon thyme, chopped
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/2 cup freshly grated asiago cheese, plus more for topping

Directions:
Directions:
Preheat oven to 375º.

Melt butter with oil, thyme, salt, and pepper. Stir in grated cheese.

Slice potatoes with mandolin as thin as possible. Combine the sliced potatoes with the butter mixture, gently working them together with your hands.

Layer slices in casserole dish. Sprinkle some more cheese on top, and bake at 350º for 40 to 45 minutes or until browned, crispy, and cooked through.
