1 tbsp. olive oil
½ c. diced red onion
1 (16 oz.) white melting cheese, shredded or cubed (I use white American cheese or Queso Blanco)
4 oz. pepper jack or monterrey jack cheese (optional)
1 (10 oz.) mild Rotel diced tomatoes
2 c. fresh baby spinach, roughly chopped
½ c. fresh cilantro, chopped
1 jalapeno, finely chopped (optional)

Directions:

On stove top, use large saucepan to heat oil over medium-high heat.

Add onion and saute for 4-5 minutes, until it’s translucent.

Turn heat down to medium-low, then gradually add cheeses.

Stir together slowly for a few minutes until cheese is melted.

Add Rotel, spinach, and cilantro. Stir until combined.

Heat on low for 5 minutes, then remove from stove top.

Pour into a bowl and serve immediately with chips or transfer dip to a crockpot to keep warm.
