2 (15 oz.) cans Mexicorn or Fiesta corn
½ c. red onion, diced
½ c. green bell pepper, diced
½ c. tomato, diced (optional)
½-1 c. mayonnaise
Salt and pepper to taste

Directions:

Put all ingredients into a medium or large bowl. Stir until combined.

Cover and refrigerate at least 4 hours or, if possible, overnight.
