½ lb. dried black-eyed peas
Water (enough to cover ham hock)
1 smoked ham hock
1 tbsp. shortening or vegetable oil
1 tbsp. sugar (I use Stevia)
2 tsp. salt

Directions:
Directions:
In a large boiler, put ham hock and water. Boil for 45 minutes.

While the ham hock is boiling, place dried beans in a bowl and cover with cold water.

Add shortening, sugar and salt to boiling water while ham hock is boiling.

After 45 minutes, sort through beans and place good ones in boiler with ham hock. Turn down to medium heat.

Every 45 minutes to an hour check the water level in boiler and add water as needed.

The second hour turn beans down to low heat and keep checking on the water level of beans so they don’t burn.

Once beans are tender enough and the juice/gravy has formed, you can turn the beans off.

Cook beans at least 2 hours for best results.
