2 bunches of collard greens, cleaned and cut
1 smoked ham hock
1 tbsp. shortening or vegetable oil
1 tbsp. sugar (I use Stevia)
2 tsp. salt
½ tsp. accent
Water (enough to cover ham hock)

Directions:
Directions:
In large boiler/pot, place ham hock and water. Boil ham hock on medium-high heat for 45 minutes to an hour.

Add shortening, sugar, salt and accent during boiling process.

After 45 minutes, put collard greens in pot and turn stove top down to medium heat.

Cook for 1½- 2 hours depending on how tender or firm you want your greens.

Add more seasoning, salt, accent or sugar, if needed at end of cooking process.
