1-1/2 lbs new potatoes, skin on, cut in 1” chunks
3 tablespoon extra virgin olive oil
1-1/2 teaspoon kosher salt
1 cup grated Parmesan cheese
8 sprigs fresh thyme

Directions:
Directions:
Heat oven to 400. Toss all ingredients in a bowl. Transfer to a 9x13 pan. Roast stirring once till golden brown and crisp, about 50 minutes.
