Put into a bowl:

3 stalks celery, grated or sliced very thin
1 jicama, grated or cut into very small pieces
1 firm apple, like Pink Lady or Granny Smith, grated or cut into very small pieces

Add:
a couple teaspoons lemon juice
a tablespoon or so of good tasting olive oil
salt and pepper to taste

Stir and serve.
