Date Nut Pinwheel Cookies

2 1/4 cups chopped dates
1 cup sugar
1 cup water
1 cup ground nuts
1/2 teaspoon salt
Combine dates, sugar and water. Cook until thick. Add nuts and let cool.

1 cup margarine
2 cups brown sugar
3 eggs well beaten
4 cups flour
1/2 teaspoon baking soda

Directions:

Using beaters, cream margarine, add brown sugar and beaten eggs. Add baking soda and flour. Mix well.

Chill thoroughly.

Divide dough into two parts and roll into rectangle about 1/4" thick.

Spread each rectangle with 1/2 of the date mixture and roll jelly roll style. Wrap in wax paper and chill over night.

Slice down about 1/2 inch thick.

Bake at 400 degrees about 9 minutes.

This was one of Dad’s favorite Christmas cookies! He loved dates and nuts! Remember Mom’s Date and Nut cake? It was one of his favorites too!
