1 eggplant

1 large onion sliced

3 stalks of celery chopped

½ can of tomato paste

Capers washed

Green Olives (pitted)

½ cup of wine vinegar

2 tablespoons sugar

Directions:
Directions:
Wash and cut eggplant into cubes with skin on and brown it well in oil. Put aside when done. Now take the onion and celery and brown it very slightly and add the tomato paste and a little water, but don't make it watery. Let it cook over small flame for about 20 minutes then add the vinegar, sugar, capers and olives. Now add the eggplant. Mix all together and simmer for 5 minutes.
