Ingredients:  
Ingredients:  
1 whole cut up chicken (or whatever pieces you like)
Flour for dredging with lots of salt and pepper in it
2 finely slice medium onions
Finely minced garlic
butter
olive oil
Approx. 4 cups of chicken broth

Directions:
Directions:
Dredge chicken and brown on 4 sides in butter and olive oil in a large deep sided frying pan or shallow pot.
On top put:
onions and garlic
sprinkle with salt and pepper
Then pour broth on top to cover approx. half way.
Cover tightly and simmer til cooked
Remove chicken and use immersion blender to blend broth into gravy
Pour over chicken

Serve with mashed potatoes, rice or polenta.

Variation1 :
Add white wine and mushrooms toward the end of cooking

Varation 2:
Add tomatoes and 1 can of peas halfway through cooking
