3 ears white corn cooked
8 Tablespoons olive oil
5 medium firm but ripe tomatoes peeled, seeded and cut into chunks or
substitute 1½ pints cherry tomatoes, halved.
1 small red onion, peeled, trimmed, halved and thinly sliced
4 clove garlic, minced
⅓ cup coarsely chopped parsley leaves (preferably flat leaf)
12 to 24 fresh mint leaves, torn into pieces
6 Tablespoons olive oil
3 Tablespoons red wine vinegar
salt and freshly ground pepper
1 pound dried pasta, preferably shells, snails etc.

Directions:

Mix all ingredients together, and refrigerate until ready to serve. Use basil instead of mint for a less assertive flavor.
