¾ cup shortening
1 cup sugar
1 egg
¼ cup molasses
2 cups all-purpose flour
1 ½ tsp ground ginger
1 tsp baking soda
1 tsp ground cinnamon
¾ tsp ground cloves
½ tsp salt

Frosting:
2 cups confectioners’ sugar
3 tbsp softened butter
1 tsp grated lemon peel
3 to 4 tbsp lemon juice

Directions:
Directions:
1. Cream shortening and sugar until light & fluffy.
2. Add egg.
3. Beat in molasses.
4. Combine dry ingredients.
5. Add to creamed mixture and mix well.
6. Drop by rounded teaspoon onto greased baking sheets.
7. Bake at 350 degrees for 8 to 10 minutes.
8. Remove to wire rack to cool.
9. Frost cookies and sprinkle with grated lemon peel.

Every year at Christmas my wonderful neighbor used to bake these for me and we would sit in her living room and toast the season with a nice bottle of red. She has since moved but we continue to keep up the tradition.
