1 cup plus 2 tablespoons warm water
1 tablespoon white sugar
1/2 tablespoon instant dry yeast
1-1/2 cups bread flour
1 teaspoon kosher salt
1 tablespoon olive oil
1-1/2 cups all-purpose white flour

Directions:
Directions:
Put the water and sugar in bowl of stand mixer.
Sprinkle with the yeast and let proof 10 minutes.
Add the 1-1/2 cups bread flour, salt and oil.
Use dough hook.
Turn on mixer and add flour until the dough cleans the sides of the bowl.
Knead 3 minutes (add 2 tablespoon flour if needed).
Cover, let with 10 minutes, mix ten seconds - repeat 5 times for a total of 6 times.
Pat dough into a 9x13 rectangle.
Roll up and put seam-side down on baking sheet covered with parchment paper.
Put in plastic bag and let rise 1 hour.
Preheat oven to 375 degrees.
Slash the bread and put in oven along with 3 to 4 ice cubes.
Bake 25 to 30 minutes.
