1 medium onion
1 small can tomato paste
1 can of peas
1 pound chop meat
1 box (16 ounces) Carolina Rice
½ lb butter or margarine (2 sticks)
6 eggs
approx. ¾ cup grates cheese
1 box seasoned break crumbs
½ quart oil
Mozzarella cut into tiny cubes

Directions:
Directions:
For meat filling (inside of Rice Balls), cut up onion & saute', add meat and paste, a little black pepper to taste. Cook 1 hour and let cool. Add can of peas (drained) just before making rice balls.

Cook rice per directions on box.

To Form Rice Balls-When rice is cooked add butter, grated cheese and egg yolks (Save egg whites). Spread rice out in platter to cool. (I put in refrigerator for a few hours). When rice is cool put a little in palm of hand and flatten add 1 tsp of the sauce mixture and 1 piece mozzarella then add a little more rice to form ball dip in egg white then roll in breadcrumb. Refrigerate 1 hour or longer and deep fry until golden brown. (Makes about 25)
