1 Romaine Lettuce, chopped, or any green crunchy lettuce
1/4 Bell pepper, chopped
2 Green onion, sliced
1 Carrot grated
1 Tomato, chopped, or cherry tomatoes
1 Cup cooked Tri-color Quinoa, cooled
Grilled Chicken, any cold cooked protein

Directions:
Directions:
Chop all ingredients and put into a salad bowl. Reserve chicken for topping.

Pour dressing over salad mix and toss when ready to serve. Serve with chicken.

(If you will not eat right away, set dressing aside.)

1 Crushed garlic
1 tsp Salt
1/2 tsp Pepper
Juice of 1/2 a Lemon
1/4 tsp Thyme
1/4 Olive oil

Crush garlic with side of knife on cutting board. Add to a mixing jar with the rest of ingredients. Shake jar to blend.
