1 cup butter, softened
1/2 cup sugar
1/2 tsp. clear vanilla
2 cup flour
1/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. coconut flavor
4 oz. crushed pineapple with juice

Directions:
Directions:
1 - Beat butter approximately 30 seconds.
2 - Add sugar, vanilla, coconut flavor, salt, and baking powder.
3 - Beat approximately one minute.
4 - Continue beating and add flour 1/2 cup at a time until combined.
5 - Add pineapple and blend until combined.
6 - Wrap dough in plastic wrap and place in refrigerator for at least 1 hour.
7 - Let dough come to room temperature.
8 - Roll out dough to desired thickness.
9 - Cut out shapes.
10 - Bake at 350 on parchment lined baking pan for approximately 12 minutes or until edges are lightly brown.
11 - Cool at least 15 minutes before serving.

Makes approximately 24 to 30 cookies,
