Ingredients: • 2 tbsp Sugar • ½ cup oil • ½ cup vinegar • 1 whole chicken (cut into leg - 2pcs, thigh - 2pcs, breast- 3pcs) • 4 green hot chillies peppers, cut into small pieces ( if you like hot, add more chillies and little more sugar) • 1-2 green bell peppers (cut into very small cubes) • 1 cup ketchup (preferably Heinz) • Soy sauce (preferably light superior Pearl River brand, if not available, any can do) • Dark soya Sauce (preferably Pearl River brand, otherwise any can do) • Optional, HP Sauce and Worcestershire Sauce (optional)

Directions:1. Add oil in a sufuria/pot on high heat 2. Once the oil heats up, add cubed green bell peppers and sugar. Keep stirring 3. In about 2-3 minutes, add green chillies (to taste) 4. As soon as the peppers turn light brown, add chicken pieces 5. Add about a ½ cup water and stir and cover for about 2 minutes 6. Add dark soya sauce (to bring a slightly darker colour) 7. After about 3 minutes, add vinegar and stir and cover 8. After about 3 minutes, add ketchup and a little Worcestershire sauce (to taste) 9. After about 3 minutes later, if the colour looks lighter add a little soy sauce (only for colour) 10. Once the chicken is ready, if you need more gravy, add a little water 11. Reduce the heat to minimum and let it simmer for 5-10 minutes 12. Enjoy :) |
