Ingredients: 2 to 3 very ripe bananas, peeled
1/3 cup melted butter (5 tbsp. plus 1 tsp.)
1 tsp. baking soda
Pinch of salt
3/4 cup sugar (1/2 cup if you would like less sweet, 1 cup if sweeter)
1 large egg, beaten
1 tsp. vanilla extract
1 and 1/2 cups of all-purpose flour
1/2 cup of chopped pecans or add to taste if you want to add nuts

Directions:Preheat oven to 350º, and butter a 4 x 8-inch loaf pan.
In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas. Mix in the baking soda and salt. Stir in the sugar beaten egg, and vanilla extract. Mix in the flour.
Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour at 350º or until a tester inserted into the center comes out clean.
Remove from oven and cool completely on a rack. Remove the banana bread from the pan. Slice and serve.
(A bread knife helps to make slices that are not crumbly.) |

Notes: You can change the sweetest of the bread by the amount of sugar.
I have made it with less sugar and I personally like the bread with 1 full cup of sugar.
You can use brown sugar instead of white sugar or you can mix both sugars together as long as they add up to one cup or 3/4 cup or 1/2 cup altogether.
Instead of nuts added you can add chocolate chips or raisins.
When baking keep a close eye on it. Just a few minutes can make the bread overdone.
Also if you add choc chips then you might want to use less sugar (1/2 cup) because it will come out very sweet!
