Pumpkin Cookies

2 ½ cups all purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp salt

1 ½ cups granulated sugar

½ cup butter, softened (1 stick)

1 cup Libby's 100% pure pumpkin

1 large egg

1 tsp vanilla extract

Preheat oven to 350º, grease baking sheets.

Combine flour, baking soda, baking powder, cinnamon, nutmeg and salt in bowl until well blended.

Cream butter and sugar together with mixer in large mixing bowl until well blended. Beat in pumpkin, egg, and vanilla extract until smooth. Gradually beat in flour mixture.

Drop mixture by domed ⅛ cup increments (2 Tbsp) onto prepared cookie sheets.

Bake 15 minutes in electric oven, about 12 minutes in a gas oven, or until edges are firm.

Remove from oven, let cook for 2 minutes. Transfer to wire cooling racks to cool completely.
 

Pumpkin Cookie Glaze

2 cups SIFTED powdered sugar

3 Tbsp milk

1 Tbsp melted butter

1 tsp vanilla extract

Combine ingredients together in bowl until smooth.

Drizzle glaze over cookies.
