4-6 Artichokes
4 garlic cloves crushed
fresh Italian parsley
olive oil
salt and pepper to taste
one large pot with cover

Directions:
Directions:
Cut each point of every leaf. Cut stems to
flatten bottoms and open each artichoke enough
to make room to stuff with garlic, parsley, salt and
pepper between as many leaves as possible.
Place each one next to each other firmly in
the pot with a few inches of water. Sprinkle
just enough oil to go between leaves.
Add salt and pepper.Cover and simmer so as
to steam, They are done when you can detach
each leaf easily. Medium heat should
allow the water to stay below the top of
each of them. Keep checking to make
sure that water isn't boiling up and over. This
may take around 45 minutes depending on the
sizes.
