4 cloves garlic, sliced

1 -1.5 pound Italian, pork or chicken sausage

Salt

Onion powder

Pepper and/or white pepper

Crushed red pepper flakes

2 pounds broccoli rabe, stems trimmed or 3 bunches baby broccoli

1 pound orecchiette pasta

Shredded Pecorino or Parmesan

Panko crumbs. Heated and browned over stove with a little oil

Cook garlic for 1 min in a tiny bit of oil in a large skillet

Take sausage out of casing. Cook sausage in skillet with the garlic. Crumble

Bring pot of water to a boil. Add pinch of salt and broccoli rabe. Cook for 5 minutes. Reserve the water. Immediately put broccoli in ice water. chop into bite sized pieces

Add pasta to the reserved boiling water until al dente--about 12 min. Reserve 1.5 to two cups of the cooking water before draining

Add pasta, broccoli, pepper flakes, pepper, onion powder, a little salt, the reserved pasta water, a cup of dry white wine. Cook over low heat for 2-3 minutes

Sprinkle with shredded pecorino and browned panko crumbs before serving

Garnish with parmesan
