3-4 cups corn kernels (fresh is preferred, but frozen or 2/15- oz cans work great too!)
4 ounces cream cheese, room temperature
½ cup sour cream
½ teaspoon garlic powder
¼ teaspoon kosher salt
1 cup shredded pepper jack cheese
½ cup shredded sharp cheddar cheese
½ cup shredded Monterey jack cheese

1. Preheat oven 350.
2. Combine ingredients together in a large bowl. Pour into a small casserole dish.
3. Bake for about 30 minutes or until cheeses are melted and golden brown on top.
4. Serve hot with tortilla chips or crackers.

I like to sprinkle a little bit of cheese on top before baking, but it's not necessary.
