2 cups all purpose flour
2 Tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
½ tsp. ground nutmeg
¼ tsp. salt
1¾ cup milk
1 cup canned pumpkin
2 large eggs
2 Tbsp. oil

Directions:
Directions:
Mix flour, sugar, baking powder, baking soda, cinnamon, nutmeg and salt in a medium sized bowl. In another medium sized bowl, beat milk, pumpkin, eggs and oil until blended. Add milk mixture to flour mixture; stir just until moistened.

Heat a griddle or wide frying pan over medium heat. When griddle is hot, grease lightly. For each pancake, spoon about ¼ cup of batter onto griddle, spacing about 1 inch apart. Cook until tops are bubbly and appear dry; turn and continue to cook until other sides are browned. Offer with butter and syrup. Makes about twenty 4 inch pancakes.
