BATTER:
1½ cups brown sugar
¼ cup vegetable oil
1 egg
1 cup sour milk
2 tsp vanilla
1 tsp baking powder
2 cups rhubarb, chopped
2½ cups flour

Sour milk: to make 1 cup of sour milk put either 1 T vinegar OR 1 T lemon juice in a 1 cup measuring cup... fill to top with milk. Stir and let stand for 5 minutes


TOPPING:
1 T butter
⅓ cup white sugar
1 tsp cinnamon

Mix all of the batter ingredients together in a bowl

Fill muffin cups ¾ full

Mix all topping ingredients together then sprinkle on muffin tops

Bake @ 375º for 25 minutes

We had these muffins almost every morning when we went out to visit in PEI!
