For stock:
1 whole chicken (cleaned with all fat left on)
1 whole onion peeled and just cut in half
3 stalks celery
2 cups chicken broth
salt and pepper
water to cover

Once the stock is made and chicken deboned and cut up place chicken in pot with
4 carrots sliced
4 stalks celery, halved sliced
1 large onion cut in large squares
16 oz chopped spinach frozen or fresh
1/2 cup cooked rice
salt and pepper to taste
fresh dill (optional)
Grated cheese

Directions:
Directions:
Put the washed chicken into a large pot add all stock ingredients, cook for about 3 hours on med heat once stock is made drain stock with a colander with stock going into another pot.

Let chicken cool take out all meat from the chicken and cut up and place into stock add sliced carrots, celery, onion, and spinach and continue cooking until carrots are tender season the broth with salt, pepper and if more taste is needed add one chicken bouillon. Add cooked rice and once in a serving bowl add grated cheese and fresh dill if desired.

A drop of lemon adds a great taste.

You can substitute orzo instead of rice.

Also I add a drop of lemon to each bowl when serving.
