Ingredients:  
1 Tbsp Olive Oil (I like to use the flavored oil)
1 Tbsp Minced Garlic (about 2 - 3 large cloves)
1 tsp Dried Oregano
1 tsp Italian Seasoning
2 lb diced fresh Tomatoes (leave the skin on and use blender to cut up in the end)
1 tsp Agave Syrup or Honey
1/2 tsp Red Pepper Flakes
1/2 tsp Kosher Salt
Black Pepper

*I add 1/2 chopped Pepper & 1/2 chopped Onion to tomatoes

Directions:
Directions:
In a medium saucepan over low heat warm the olive oil.
Add garlic & seasonings.
Cook, stirring for about 1 minute.
Increase heat to medium and add the remainder of the ingredients.
Leave on medium heat, stirring occasionally, until it comes to a boil.
Reduce heat to low for a nice simmer.
Simmer uncovered for 90 mins.
Allow to cool and use blender to mix (and chop tomato skins)

Freeze in small containers (then use sealer) to freeze in little individual (1/2 cup) "pucks" that are just the right size for 1 pizza.

Try not to leave out the little bit of sweetener (Agave or Honey) - it really helps cut the acidity of the tomatoes.

Great way to use up garden tomatoes and very tasty pizza sauce! Love it.
