4 (1/4-inch thick) slices of smoked pork jowl, cut into chunks
1 medium onion, chopped
8-10 ounces brussels sprouts, ends trimmed and then shredded
14 ounces boiled potatoes, at room temperature (~3 small-medium)
salt, to taste
pepper, to taste

1 egg per person

Put the duck fat in a large, nonstick skillet over medium heat. Add the jowl and cook until golden all around, about 7 minutes. Just eyeballing it, if you have more than 2 tablespoons of fat in the bottom of your skillet, pour the excess into a small bowl or jar and reserve (in case you need to add more later).
