1/2 cup coarsely chopped carrot
1/2 cup coarsely chopped celery
1 package of refrigerated mashed potatoes
1 can of chicken broth
1/2 cup milk
1 garlic clove, minced
1/4 tsp salt
1/8 tsp pepper
1/2 cup sour cream
2 TBSP snipped fresh parsley, OR sliced green onions,
Crumbled bacon
shredded cheddar cheese

Directions:
1. Chop carrot and celery. In a sauce pan place mashed potatoes, broth and milk and whisk until smooth. stire in carrot, celery, minced garlic and seasonings. Bring to a boil; reduce head. Simmer uncovered for 10 minutes.

2. Remove from heat; stir in sour cream and parsley. Ladle soup into bowls, top with garnish
