2 cans cannellini beans, drained and rinsed
½ cup olive oil
1-4 cloves garlic
4 T lemon juice
Parsley, an entire bunch of fresh flat leaf Italian
½ t salt
½ t pepper

Food process or blend all ingredients, serve with pita chips, or vegetables if you want to be super healthy. It's supposed to be smooth, not grainy. My food processor doesn't do a great job; I should probably use a blender.

My friend Maria made this for Tom's 50th bday party at the Lake of the Ozarks. We all attacked it on a boat after drinking beer in the sun. Would highly recommend this method of consumption. I'm adding the recipe because MayMay and Pops need to eat more fiber!
