2 c. mashed sweet potatoes
3/4 c sugar
2 eggs, beaten
¼ melted butter
½ c. milk
½ tsp. each of salt, cinnamon and nutmeg

TOPPING:
½ c. chopped pecans
½ brown sugar
3/4 c. crushed corn flakes
½ stick melted margarine

Directions:

Mix first ingredients together. Bake at 400º for 30 minutes.
After 30 minutes, spread topping mixture on top of baked sweet potato mixture. Bake 10 minutes more.

I use yellow/orange sweet potatoes and bake them until well done. Peel off the skin, remove blemished spots. Mash them for use in this recipe.
