16 jumbo shrimp (6 to 8 per lb)
1/2 lb melted salted butter
5 cloves garlic, chopped
2 scallions, finely chopped
1 Tablespoon oregano
1 Tablespoon parsley, finely chopped
1/2 Tablespoon fresh dill or dried dill weed
1/2 teaspoon white pepper
1/2 teaspoon salt
1 8 oz can tomato sauce
1/2 cup dry sherry (NOT cooking sherry)

Peel shrimp and clean well. Dry well with paper towels.

Melt butter over low heat in a small saucepan. Add garlic, scallions, dill week, parsley, oregano, salt and pepper. Place shrimp in an oven-proof casserole and pour melted butter and spice mixture evenly over shrimp. Place casserole in preheated 325šThin tomato sauce with sherry and pour evenly over the shrimp. Bring to a boil on top of stove, lower heat and simmer about 10 minutes. Serve over white rice.
