4 hard-boiled eggs
10 red potatoes (small/medium in size)
1/2 cup Mayonnaise
1/2 cup Ranch Dressing
1/3 cup dill pickle, chopped
1 Tablespoon prepared yellow mustard
1 teaspoon salt
1/4 teaspoon pepper
2 scallions, chopped
chopped parsley
1/8 teaspoon paprika

Directions:

Cook potatoes until fork-tender, peel them and chop into bite-size pieces. Add 1/8 cup of white wine vinegar and stir. Let the potatoes sit overnight.

The next day, combine all the remaining ingredients with the potatoes and chopped eggs. Sprinkle the top with the paprika.
