2 tbsp expresso powder
2 tbsp caster sugar
2 tbsp coffee liqueur
1 tsp vanilla extract

1. Place all the ingredients in a jug and our over 500 ml boiling water
2. Whist well until the sugar has dissolved.
3. When the mixture is cold, transfer to freezer in a flat container. Every 45 minutes remove from the freezer and use a fork to scrape the frozen edges of the granita into the centre, to encourage freezing. Mash the granita with the back of the fork to break up any larger ice crystals that may be forming.
4. Repeat this process for 3 hours, or until the mixture is well frozen - but not solid. Give it a final mix with the fork and place it in its final container to freeze until needed.
