2 Tbs olive oil
2 tsp minced garlic
1/2 c celery chopped
1/2 c yellow onion chopped
1/4 c zucchini chopped
1/2 c carrots chopped
3 c fresh spinach or kale
1 15 oz can red kidney beans
1 15 oz great northern beans
1 24 oz can diced tomatoes
1 parmesan rind (optional but worth it)
1 tsp salt
1/2 tsp ground pepper
1 tsp dried oregano
1/2 tsp dried basil
1/4 tsp dried thyme
1 1/2 c hot water
4 c veggie (or chicken) broth
1/3-1/2 c small pasta
2 Tbs fresh parsley

Directions:
Directions:
Heat 2 Tbs olive oil over medium heat, add onion, celery, garlic, zucchini in oil x 5 min. Add broth, hot water, tomatoes, beans, carrots, parm rind and spices. Bring to boil, reduce heat and simmer x 30 min. Add pasta and spinach or kale and cook at 15-20 min.

Sprinkle with parsley and freshly grated parmesan and serve wit crusty bread and salad.

This is a minestrone recipe I picked up somewhere. It's tasty and the kids started calling it "magic soup" because they couldn't taste the veggies.
