1 ½ cups uncooked long-grain rice (cook before adding to recipe)
1 ½ lbs medium shrimp, raw, peeled and deveined
½ cup butter
1 green bell pepper, chopped
1 onion, chopped
3 celery ribs, chopped (optional)
2 garlic cloves, minced
4 green onions, chopped
2 (10 3/4 ounce) cans cream of shrimp soup, undiluted
½ teaspoon salt
½ teaspoon pepper
1 cup cheddar cheese, shredded

Directions:
Directions:
Prepare rice.
Melt butter, add onion, celery and green pepper. Cook 6 to 8 minutes.
Add garlic and shrimp, cook one minute.
Add soup, salt and pepper. Cook three minutes. Do not over cook shrimp.
Combine shrimp mixture with rice. Put all in a lightly greased 13 x 9” casserole dish. Sprinkle with cheese on top. Bake at 350° for 25 minutes.
