Oatmeal:
1 stick (8 tablespoons) butter, melted, plus for greasing the pan
2 cups quick oats
3/4 cup granulated sugar
3/4 cup whole milk
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon baking powder
1 egg

To Serve:
Heavy cream
Brown sugar
Blueberries

1. Preheat the oven to 350 degrees. Grease a 9x12 baking pan with butter.

2. In a large bowl, combine the oats, sugar, cinnamon, nutmeg, salt, and baking powder.

3. Pour in the milk and stir. Add the melted butter, vanilla, and finally the egg. Stir it all together.

4. Pour the mixture into the prepared pan and spread it out. Bake for 30 minutes or until the oatmeal is set.

5. You can get fancy and cut the oatmeal into squares, but we just spoon it out of the pan. Drizzle with a little heavy cream, a sprinkle of brown sugar (optional), and blueberries. Serve hot.

This oatmeal tastes more like a dessert, but it is a great make ahead breakfast that you can reheat for the entire week. Just store in a container in the fridge, scoop out your desired amount, top with a splash of cream, sprinkle of brown sugar, and blueberries. Heat the oatmeal with desired toppings in the microwave, stir to combine, and enjoy! I like my blueberries warm and mixed in with the oatmeal, but you could keep them fresh and sprinkle on top before serving. All up to you!

You don't have to add the extra toppings, but I HIGHLY recommend :) It does however still taste great without...just a mildly sweet and slightly spiced oatmeal.
