CAKE
6 large eggs, separated
2 cups sugar
2 cups flour
2 tsp baking powder
1/2 cup whole milk
1 tsp vanilla extract

CREAM TOPPING
1 14 oz can evaporated milk
1 14 oz sweetened condensed milk
1 cup heavy cream

ICING
3 T water
3//4 sugar
3 large egg whites
1 ripe mango, peeled, seeds removed and thinly sliced
1 ripe papaya, peeled, seeds removed and thinly sliced

1. Preheat the oven 350º
2. Lightly grease and flour 9 x 13 baking pan
3. Beat the egg whites on low speed until soft peaks form. Add sugar gradually with the mixer running and
peak to stiff peaks. Add the egg yolks q at a time, beating will after the addition of each
4. Sift together the flour and baking powder and add to the egg mixture, alternating with the milk. (Do this
quickly so the batter does not lose volume) Add the vanilla.
5. Bake until golden 25 minutes
CREAM TOPPING
1. In a blender combine evaporate milk, condensed milk and heavy cream blend on high

Remove cake from oven and while still warm pour the cream mixture over it
Let sit and cool to room temperature
Cover and chill at least 4 hours or overnight

ICING
1. Combine water and sugar, bring to boil. Cook until reaches the soft ball stage (235º)
2. Remove from the heat
3. In a medium bowl, beat the egg whites to soft peaks
4. While beating, add the hot syrup in a stream
5. Cool until glossy icing forms

ASSEMBLE
remove cake from refrigerator spread icing and arrange mango and papaya slices over the top and serve
