1 pound spicy ground sausage **For this recipe I prefer to use breakfast sausage, but Italian or regular works fine. If you don't like spicy, mild sausage works too.
1/2 yellow onion, chopped
1 (16-ounce) block Velveeta cheese, cut into cubes
1 can Ro-tel, undrained
1 can refried beans

Directions:
1. In a skillet on medium-high heat, brown sausage, breaking it apart as it cooks. Once cooked through, remove sausage and drain off any excess fat.

2. In a pot over medium-high heat, saute chopped yellow onion in about a tablespoon of olive oil. Continue cooking until onions become translucent. Turn heat to medium and add cubed Velveeta, refried beans, and Rotel. Stir and continue to cook until cheese begins to melt.

3. Once cheese is fully melted, add sausage to the cheese mixture. Stir and heat through.

4. Serve with tortilla chips!

**If the cheese dip is too thick or if you would like it to be a thinner consistency, add a splash of milk to thin it out. The beans will give you a thicker dip, so you can also add only half the can if you prefer, but definitely try it with the beans. Even if you don't usually care for refried bean, they add great flavor and texture to this dip.
