½ lb. uncooked penne rigate
½ cup sour cream, room temperature
4 oz. cream cheese, room temperature
¼ cup half and half or milk, room temperature
1 package dry Ranch mix
5 oz. frozen spinach, thawed and squeezed of any liquid
1 lb. cooked, skinless chicken breast or thigh, shredded
1¼ cup shredded mozzarella cheese

Preheat oven to 375º. Grease a 8x10 baking pan. Cook the penne according to package directions. Drain, rinse, and set aside. In a large bowl, stir together the sour cream, cream cheese, half and half, and Ranch mix until smooth. Stir in the spinach and chicken until evenly distributed. Stir in the penne and transfer to prepared baking pan. Sprinkle on mozzarella cheese. Bake until cheese is melted and bubbly, about 10 minutes. Serve warm.
