1 can (14 ounces) sweetened condensed milk
12 ounces frozen whipped topping, thawed
1 can (20 ounces) of crushed pineapple, drained
1/3 cup lemon juice
1 cup flaked coconut, toasted (recipe does not specify if sweet or unsweetened, and I think either works)
2 eight inch graham cracker crusts

Place the milk in a bowl and fold in the whipped topping. Add pineapple and lemon juice; stir for 2 minutes or until slightly thickened. Pour into the the pie crusts. Sprinkle with the toasted coconut. Cover and refrigerate for at least 2 hours.

This is so quick and easy. Very light and refreshing and perfect for summer. Recipe didn't say if this could be frozen, but if I try that with success, I will update the recipe.
