Mustard Salmon Recipe

1/4 tsp pepper
1/4 tsp salt
1 large egg white
1 tbsp Dijon mustard
1/2 cup Panko bread crumbs
1/2 cup grated Pecorino Romano cheese
1-1/2 lbs salmon filet (4 pieces)

Directions:

Preheat oven to 450º

Line baking sheet with aluminum foil. Set aside.

Whisk egg white and mustard together. Set aside.
In a shallow dish, combine Panko, Romano cheese, salt and pepper. Brush egg mixture onto top and bottom of each piece of salmon. Dip salmon pieces into crumb mixture, and place on foil. Spoon remaining crumbs evenly over the tops of the salmon pieces. Bake for 12 minutes until golden.

Serve with rice/squash, etc.
