7-8 nice size yellow squash
1 onion
butter
Saltines or Ritz Crackers
Velvetta Cheese (slices if available)

Directions:
Directions:
Slice yellow squash and chop an onion. Boil together until fairly soft. Drain.
Butter a 9 x 13 casserole and layer ½ of the squash/onion on bottom.
Drizzle lightly with butter.
Next, place a layer of sliced Velvetta cheese.
Spread a layer of crushed Saltine or Ritz crackers over the cheese.
Layer again with squash/onion.
End up with crushed crackers drizzled lightly with butter.
IMPORTANT - Use only one layer of cheese.
Bake at 350º for 20-30 minutes or until crackers are golden brown.
