1 small bag dried pinto beans (debri removed/washed)
2 diced fresh tomatoes
1 chopped onion
4 large cloves crushed garlic
4-6 slices bacon - cut into bite size pieces
1/2 cup cilantro, chopped with stems separated
2 - whole fresh jalapeños
2 - Knorr chicken bouillon cubes

After beans have soaked for 6-8 hours, they will cook in 40-50 minutes. My directions are for un soaked beans so add the sautéd veggie mixture during the half way point if you soak. n a large pot, add pinto bean with double amount of water. Boil for 15 minutes then turn down heat to simmer. Add both bouillon cubes, stir to dissolve, cover and do not uncover until 1 hour of simmering to add the following mixture. In a skillet, cook bacon the scoop out then drop into beans along with the cilantro chopped stems and a few cilantro leaves. In the remaining bacon grease, sauté onions, garlic and tomatoes for 5 minutes. Add this mixture to the beans and both whole jalapeños for added flavor. Taste for salt. Simmer beans for an additional 1-2 hours. Add remaining cilantro15-30 minutes before serving.
