2 c. pecan halves and pieces
3 c. light brown sugar
1 c. whipping cream
1/4 c. butter
2 T. light corn syrup
1 t. vanilla extract
Wax paper

Directions:
Bake pecans in a single layer at 350º for 8-10 minutes, until toasted and fragrant; stir halfway through. Cool completely. Bring brown sugar and next 3 ingredients to a boil in a heavy Dutch oven over medium heat, stirring constantly. Boil, stirring occasionally, 6-8 minutes; to 236°. Remove from heat. Let stand until mixture reaches 150° (20-25 minutes). Stir in vanilla and pecans. Using a wooden spoon, stir constantly 1-2 minutes or just until mixture begins to lose its gloss. Quickly drop by heaping tablespoonfuls onto wax paper; let stand until firm (10-15 minutes).
