1/6 loaf white bread
1/3 C raisins
3 T chopped pecans
1 egg
3 T vanilla
1 T lemon juice
1/3 C sugar
1 C milk

For Topping:
1˝ T margarine
1˝ T milk
Confectioners’ sugar

Directions:
Directions:
Crumble bread (pull apart—tear each slice into 3 to 4 pieces) and place into 9x13 pan. Add raisins and pecans. Mix milk and sugar together; add eggs, vanilla, and lemon juice. Mix with whisk until soupy. Pour over bread mixture and cook at 350 for 1˝ hours.

Mix topping ingredients, adding confectioners' sugar until thick. Spread over the top.

On one of our beach trips, Kristi and I ate at The Gift Horse in Foley and tried this absolutely amazing dessert. I had never eaten bread pudding and would never have tried it if I knew what it was!

I knew Pat Parker loved and collected cookbooks, so when we went into the gift shop at the restaurant after lunch and saw they had a cookbook, I asked the shop attendant if that recipe was in the book. When she said yes, I bought the book for Pat. But after telling Pat about the bread pudding, she hunted through the book and no such recipe!! Well, you all know Pat’s charm, so she called the restaurant and they said no, that was one of their secret recipes and wasn't included. Of course she persuaded the chef to give her the recipe, but in measurements for 2 large restaurant serving pans, so I re-wrote the recipe into a more family-friendly size!
