Honey-Lime Grilled Mahi Mahi Recipe

Ingredients: Marinade: 1/4 cup fresh lime juice 2 T Oil (olive, vegetable, or canola will work) 1 Honey 1/4 tsp cayenne pepper pinch of salt
Blackened Rub: 1 T sweet paprika 1 T sugar 2 tsp seasoned salt 1 tsp garlic powder 1 tsp onion powder 1/4 tsp ground cayenne pepper 2 tsp lemon pepper 1/4 tsp thyme 1/4 tsp oregano 1/4 tsp basil 1/4 tsp cumin
Honey Lime Glaze: 2 T Lime Juice 2 T Olive Oil 1 T Rice Wine Vinegar 1 T Honey Salt and Pepper
4 Mahi Mahi fillets about 6 to 8 oz each (can be any other white fish)

Directions:Marinade: Whisk these ingredients together in a bowl.
Rinse the Mahi Mahi fillets under cool water and pat dry with a paper towel.
Place the fish in a zip lock bag and pour the marinade over it. Gently move the filets around so that everything is covered and place the bag in the refrigerator for 45 min to no more than 1 hour.
Remove it from the refrigerator and drip off the excess marinade.
Liberally dust each side with the Blackened seasoning. Whisk glaze ingredients in a bowl.
Heat Grill on Med High and oil the grates so the fish does not stick. Turn heat down to Med and place fish on grate, cooking for about 2 minutes glaze the top side before you turn fish. Flip fish and glaze and cook for about 2 minutes. Mahi Mahi cooks very fast. |
