1 can black beans (15-16oz)
¾ cup yellow corn, canned or fresh, cooked kernels
1 tbsp lime juice
½ cup chopped cilantro

This is one of my favorite snacks! But it can also be used as a dressing on top of lettuce and I have been known to serve it with sliced grilled chicken as well. The salad keeps well for 3-5 days and the taste gets better over time!
