3 small chicken breasts (pound to flatten between plastic wrap)
3 T olive oil
3 T butter
3/4 C flour
16 oz can of chicken broth
juice of one lemon plus zest
1/3 C capers

Directions:
Directions:
Dredge chicken in flour and brown in
skillet with butter and oil, Add chicken broth
and simmer until thick. Add lemon/zest,
capers and simmer a few more minutes.
More broth may be added for more sauce
consistency.
Serve with potatoes, rice, noodles, etc.
