1 box of yellow cake mix (according to directions)
1 Lage can crushed pineapple (drain reserving juice)
1 lb of ricotta cheese
1/2 C powdered sugar

Directions:
Directions:
Prepare cake mix according to directions using pineapple juice
to replace as much water as needed.
Place mix in 9x13 pan. Mix together powdered sugar,
pineapple and ricotta. Dollop mixture over mix as evenly
as possible without sinking it, Bake at 350º for approximately 45 minutes.
chill and serve.

I do not bake very much, but this recipe is my go to for all occasions. It is quick
and easy and tastes like it was made from scratch!
I have had this recipe for many years. I'm not sure where it came from.
My mother was the best Italian cook, but she left the baking to me.
